Simple Pasta Sauce


I was originally taught this by mother as a "bolognese" sauce, but calling it that seemed to offend Italians I know, so let's just go with "pasta sauce".

Serves 4



  1. heat oil in a large sauté pan
  2. add onion, fry until soft
  3. add herbs; stir through
  4. add garlic and mushrooms; stir through and fry until mushrooms reduce a bit
  5. add minced; break up and stir, cook until browned
  6. if using spinach, add now; stir through until wilted
  7. add tomato paste, tomatoes, and ~1cup water; stir through
  8. bring to the boil, and simmer until reduced
