One pan sausage and risoni

Small variation on this recipe.
Serves: 4
Ingredients
- 500g sausages, chopped into chunks (I used the Maple Bacon from Eaty )
- 1 onion, diced finely
- 2 cloves garlic, minced
- 1 capsicum, chopped finely
- 1 cup risoni pasta
- 1 can tomatoes
- 2 cups water; hot
- 1 stock cube (I use Massel chicken)
- 1 tsp paprika
- ½ tsp chilli flakes
- ⅓ cup nutritional yeast (optional)
Steps
- in a sauté pan on medium-low heat, heat oil
- brown the sausages lightly
- add onion and capsicum; sauté until onion is translucent
- add garlic; sauté for ~30 seconds
- add risoni; toast for a couple of minutes
- add water, stock, paprika, chilli flakes
- bring to a simmer, add tomatoes and nutritional yeast
- simmer for 20 minutes
The nutritional yeast adds a cheesiness to the finished product.
