  1. thaw spinach and blend into a fine paste
  2. set pan on med-low heat; melt ghee
  3. add cumin seeds, onion, chilli; saute until onion is translucent
  4. add tomato; saute 2 - 3 minutes
  5. stir through garlic, coriander, and garam masala; 30 seconds
  6. add spinach
  7. simmer for 5 minutes, stirring regularly
  8. add amchur; salt + pepper to taste
  9. add paneer; stir through, simmer 5 mins
  10. add milk; stir through, simmer for 5 mins

Serve on steamed jasmine rice!
