Palak Paneer

Ingredients
- 500g frozen spinach
- 500g paneer, diced ~1cm cubes
- 2 tbsp ghee
- 1 onion, diced finely
- 1 can (400g) diced tomato, with juices
- 1 tbsp garlic & ginger paste
- 1 chilli (I use green cayenne chillis)
- 1 tsp coriander powder
- 1 tsp garam masala
- 1 tsp amchur powder
- ⅓ cup cream
Steps
- thaw spinach and blend into a fine paste
- set pan on med-low heat; melt ghee
- add cumin seeds, onion, chilli; saute until onion is translucent
- add tomato; saute 2 - 3 minutes
- stir through garlic, coriander, and garam masala; 30 seconds
- add spinach
- simmer for 5 minutes, stirring regularly
- add amchur; salt + pepper to taste
- add paneer; stir through, simmer 5 mins
- add milk; stir through, simmer for 5 mins
Serve on steamed jasmine rice!
